Ingredients

  • 4 eggs separated (whisk the egg whites to stiff peak stage and until double the volume)

Preparation Steps:

Step 1
Into a large mixing bowl, add the egg yolks and sugar. Beat well until light fluffy and the color changes to a pale yellow.
Step 2
Add the oil and orange rind and mix well.
Step 3
Next, add in the orange juice. Add flour and baking powder and mix until combined.
Step 4
Now fold in the stiffly beaten egg whites.
Step 5
Pour into a prepared baking tin and bake at 170 degrees Celsius for approximately 25 minutes, or until a tester comes out clean.

Supplementary notes

Oranges grown in the fertile soils of the Mazowe Valley, about 40 minutes out of, are world-renowned. These oranges are exported to the USA, Russia, China,  South Africa, Spain, and some Middle Eastern Countries, including Saudi Arabia.

Oranges are available almost all year round here in Zimbabwe, and we’re fortunate enough to be able to pick them up from fruit sellers on nearly every corner.

I love using oranges to make this detectable Orange Cake. Its soft, chiffon texture coupled with the tang of orange zest in the glaze is genuinely a heavenly combination.

For the glaze, you’ll need:

1 and a half cups of icing sugar
Juice of half an orange
1 tsp orange zest

In a bowl add icing sugar and zest. Add enough orange juice and whisk until a smooth, slightly thick but still runny consistency is achieved.
Pour the glaze over the cake and decorate with orange slices or as desired.
